I have several possibilities - what sounds good to you?

Baked Potato (need some protein though)

carne asada tacos (from the taco shop)

Salad (mixed greens w/avacado)

nachos (chips w/cheese, salsa, homemade)

It all sounds good. I can't eat all of it. I am tempted to make the potato tomorrow with some fish & asparagus. So that leaves me with Mexican. Such decisions. . . .

This was my first night cooking since I went into hospital so I kept it easy and we just had corn and tater tot casserole (made with soy crumbles, cheddar cheese soup, tator tots and shredded cheese).

The next 2 days dh will work double shifts so I won't see him, and I have no clue what we will have for dinner those days. We may have fend for yourself nights.

I'd go for the nachos - that sounds yummy.

We had cubed steak (cut into bite sized pieces) fried with onions, corn and mushrooms. Topped with gravy and served over rice. I always like stuff like that on cold nights because it's nice and warm.

I was going to make the fish tonight, until I realized that I have a meeting for Girl Scouts. Tomorrow is an appointment for Neya, so it will be Fish Thursday.

Last night was Progresso Light soup for me, grilled cheese for Ian and an egg sandwich for Duncan. DH is traveling so that's why the smorgasbord. Tonight will be much the same since I have a meeting at school at 6:30. I might make a quicky ramen noodle soup for the boys since they like that. I'll add chicken and vegetables. I was up WAY to late last night and I'm hitting the wall. Good thing is, I fixed me dryer. Gotta love GardenWeb. So many helpful people in their home forums. Found great help in the Laundry Room forum and the man even sent me a PDF of my dryer's service manual. Now I have pictures and information so that I can DIY more.

They freeze very well. Just double wrap it and you're good to go.

Tonight we're having salsbury steak, mashed potatoes and broccoli.

amy I freeze pizza all the tiime. Wrap each slice or 2, whatever serving size you want, in foil, then put in freezer bags. My kids take pizza for cold lunch all the time.

speaking of pizza, I just called Pizza Hut for delivery. I never do delivery but I am just pooped. Last night was whole wheat pasta with cheese sauce for the girls, marinara with ground beef for DH and I. Tonight was supposed to be chicken and veg stir fry on pita bread with teriyaki glaze...but i had a lot of call ins and walk ins at work today and I am wiped.

I always enjoy hearing what people make.

Janet, your easy use of round steak is something I should try. Sarah, how do you make your garlic beef bites? I have a container of tziziki sauce (sp??) in the fridge but haven't bought lamb yet.
